The restaurant where I ordered dinner had a menu with southern selections and for an appetizer, I ordered the fried green tomatoes with apricot jelly. I had not eaten fried green tomatoes before and found it to be a great addition to my personal favorites.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>My final destination in the Carolinas brought me into Southern cooking. I located a great farmer\u2019s market to buy fresh produce, meat, seafood, local honey, herbs, wine and cheeses. The green tomatoes were jumbo size, but perfect for the recipe to recreate those crunchy, tasty fried slices that I later served the family, along with a dish that included grilled fish.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>My brother never liked tomatoes. For 25 years, he was stuck with the childhood memory of<span class=\"Apple-converted-space\">\u00a0<\/span>the time he bit into a \u201ccherry tomato and it was nothing like a cherry.&#8221; He refused to eat them since that experience, until the day I made them after my visit to the farmer\u2019s market. He tasted and loved them. His exact words were, &#8220;that is the only way a tomato should\u00a0be eaten.&#8221; In fact, I\u2019ve become a slave to making them and creating new ways to serve them on burgers, as a side, and with new dips and toppings\u2026 Recently, I decided it was time teach him how to make them on his own.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<figure id=\"attachment_186\" aria-describedby=\"caption-attachment-186\" style=\"width: 225px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-186\" src=\"http:\/\/chefseabass.com.previewc40.carrierzone.com\/wp-content\/uploads\/2018\/05\/greentomato-225x300.jpg\" alt=\"Sliced Green Tomato\" width=\"225\" height=\"300\" srcset=\"https:\/\/chefseabass.com\/wp-content\/uploads\/2018\/05\/greentomato-225x300.jpg 225w, https:\/\/chefseabass.com\/wp-content\/uploads\/2018\/05\/greentomato.jpg 450w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><figcaption id=\"caption-attachment-186\" class=\"wp-caption-text\">Sliced Green Tomato<\/figcaption><\/figure>\n<p>It\u2019s best to select firm, but not exactly rock hard, green tomatoes. If they are <em>not<\/em> green tomatoes, they\u2019ll likely be too soft to hold up.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>Slice them evenly, and close to 1\/2\u201d thick so they maintain when frying. There are other ways to prepare them, however, here I taught my brother how to do a 3-stage breading method.<\/p>\n<p><strong>Dish 1 &#8211;\u00a0<\/strong> needs seasoned flour.<br \/>\n<strong>Dish 2 &#8211;<\/strong>\u00a0is whipped eggs with a splash of buttermilk.<strong><br \/>\nDish 3<\/strong>\u00a0&#8211; should be a mix of Panko, cornmeal or a mix of both, then season with sea salt, and ground black pepper. If you want to add a little more flavor, you can always blend other spices in any of the components.<\/p>\n<figure id=\"attachment_181\" aria-describedby=\"caption-attachment-181\" style=\"width: 225px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-181\" src=\"http:\/\/chefseabass.com.previewc40.carrierzone.com\/wp-content\/uploads\/2018\/05\/breadedtomato-225x300.jpg\" alt=\"Panko Breaded Green Tomatoes Ready to be Fried\" width=\"225\" height=\"300\" srcset=\"https:\/\/chefseabass.com\/wp-content\/uploads\/2018\/05\/breadedtomato-225x300.jpg 225w, https:\/\/chefseabass.com\/wp-content\/uploads\/2018\/05\/breadedtomato.jpg 450w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><figcaption id=\"caption-attachment-181\" class=\"wp-caption-text\">Panko Breaded Green Tomatoes Ready to be Fried<\/figcaption><\/figure>\n<p>To keep them hot, I line a sheet pan with parchment paper or paper towels and put the oven.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>I use canola heated between 330 &#8211; 350 degees F. You want these to be fried to a golden color and not blackened in oil that is too hot, so you\u2019ll need pay close attention to what\u2019s going on in the pan. Since the slices are thick, it\u2019s good to take it slow and flip so they cook evenly and soften up on the inside, but not to a mushy state.<\/p>\n<figure id=\"attachment_185\" aria-describedby=\"caption-attachment-185\" style=\"width: 225px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-185\" src=\"http:\/\/chefseabass.com.previewc40.carrierzone.com\/wp-content\/uploads\/2018\/05\/frytomato-225x300.jpg\" alt=\"Fry Breaded Green Tomatoes in Canoli\" width=\"225\" height=\"300\" srcset=\"https:\/\/chefseabass.com\/wp-content\/uploads\/2018\/05\/frytomato-225x300.jpg 225w, https:\/\/chefseabass.com\/wp-content\/uploads\/2018\/05\/frytomato.jpg 450w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><figcaption id=\"caption-attachment-185\" class=\"wp-caption-text\">Fry Breaded Green Tomatoes in Canola<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>Once they\u2019re golden, use the tongs to take them out and place on the sheet pan lined with parchment. If you&#8217;re not serving immediately, or have many more to cook, like we always do&#8230; put them in the preheated oven to stay hot.<\/p>\n<p>For appetizers, I make different dipping sauces depending on the end result. This time I made a nice chipotle lime aioli, and since my brother and I were hungry for a bigger meal, I grilled Black Angus burgers and built a mountainous double-patty with jalape\u00f1o pimento cheese, butter lettuce, on a toasted onion bun, a thick layer of that chipotle lime aioli, and of course, my brother&#8217;s favorite, a dill pickle.<\/p>\n<figure id=\"attachment_184\" aria-describedby=\"caption-attachment-184\" style=\"width: 258px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-184\" src=\"http:\/\/chefseabass.com.previewc40.carrierzone.com\/wp-content\/uploads\/2018\/05\/burger-258x300.jpg\" alt=\"Black Angus Beef Burger with Fried Green Tomato\" width=\"258\" height=\"300\" srcset=\"https:\/\/chefseabass.com\/wp-content\/uploads\/2018\/05\/burger-258x300.jpg 258w, https:\/\/chefseabass.com\/wp-content\/uploads\/2018\/05\/burger.jpg 516w\" sizes=\"auto, (max-width: 258px) 100vw, 258px\" \/><figcaption id=\"caption-attachment-184\" class=\"wp-caption-text\">Black Angus Beef Burger with Fried Green Tomato<\/figcaption><\/figure>\n<p>While we were cooking, I was thinking about how, when we were kids, we used to come home from school and make giant pots of mac-n-cheese and other food coma snacks. Since those days, there&#8217;s been a lot of progress.
